A healthy and delicious treat!
Plantains with Pecans & Unsweetened Coconut Flakes
Ingredients:

2 Tbs Organic Unrefined Coconut Oil

1/2 Tsp Cinnamon

1/2 Tsp Ginger

1 Plantain, cut on the diagonal into wide slices

1/4 Cup Raw Pecans (or other nut of choice)

2 Tbs Raw, Unsweetened Coconut Flakes 1 Tbs

Reduced Vinegar (optional)
Instructions:
Warm a skillet to medium heat. Coat the bottom with coconut oil. Wait a few minutes until warm. Add the sliced plantains and sprinkle generously with cinnamon and ginger. Cook 5 minutes or until the bottoms of the plantains are lightly browned and then turn to the other side. Add the pecans and coconut flakes and cook another 3 to 5 minutes.
Serve with the reduced vinegar drizzled on top.
