This recipe is packed with flavor! This recipe uses 3 ½ cups of water instead of a huge pot of water. This makes it a one pot pasta! You can use the regular linguine or make it super low calorie and add more nutrients by using zucchini noodles or spaghetti squash. You’re gonna love this one!
Creamy Lemon Linguine
½ pound of linguine
4 garlic cloves thinly sliced
½ tsp salt
½ tsp pepper
1 package of frozen artichoke hearts (8-10 oz)
6 cups chopped spinach (may use frozen)
2 cups peas (fresh or frozen)
½ cup Parmesan cheese grated
¼ cup half and half
1 TBSP lemon zest
¼ cup lemon juice
3 ½ cups water
Put Pasta, garlic, salt and pepper in a large pot. Add water and bring to a boil over high heat. Boil stirring frequently for 7-9 minutes – until pasta is al dente. Stir in spinach, artichokes, and peas and cook until pasta is tender and the water has almost evaporated – 2-4 minutes. Remove from heat the stir in Parmesan cheese, half and half, lemon zest and lemon juice. Let stand for about 5 minutes. Sprinkle more Parmesan cheese on top and serve.
