Cherries are in season! Take advantage of these yummies while they are still in season! They are a good source of vitamin C, vitamin A, iron and potassium to keep our body functioning well. They are also a good source of antioxidants. This salad which combines cherries, quinoa and almonds is great as a light lunch or as a side dish with chicken, beef or pork.
1 cup quinoa, rinsed
2 cups water
½ tsp salt divided
¼ cup apple cider vinegar
¼ cup olive oil
¼ tsp pepper
2 cups cherries, pitted and halved
½ cup feta cheese crumbles
1/3 cup slivered almonds
¼ cup red onion, finely diced
2 TBSP chopped fresh mint
Combine quinoa and water and ¼ tsp salt in medium saucepan. Add quinoa, cover and simmer for 20-25 minutes under quinoa is tender. Fluff with fork and set aside to cool. Whisk vinegar, oil, pepper and remaining ¼ tsp salt in a large bowl. Add cherries, feta cheese, almonds, onion mint and quinoa. Chill for 2-3 hours and serve.
