As we step into the holiday season, staying committed to a healthy eating plan can become more challenging. With many holiday favorites packed with unnecessary and unhealthy ingredients, indulging in even a few holiday meals can throw us completely off-track.
It is best to approach the holidays with a set of recipes that won't sabotage you in your pursuit of healthier living, while tasting delicious. These carrot cake bliss balls are the perfect compromise.
I absolutely love this delicious carrot cake treat from The Healthy Gut. The pecans and cinnamon provide that holiday-esque aroma and crunch, and the sweetness of the maple syrup (or honey) with the orange zest and carrots provides a perfectly balanced snack.
1 cup firmly packed grated carrot (1.5-2 carrots)
1 cup pecans
1 cup finely shredded coconut
2 tbs almond butter
Zest from 1 orange
2 tbs maple syrup or honey
2 tbs coconut oil
½ tsp cinnamon
Place all ingredients in a food processor and blitz until well combined.
Take 1 tablespoon of mixture and roll into balls. Set aside and continue until all of the mixture has been turned into balls.
Refrigerate until firmer.
Keep in an airtight container in the fridge for several days or freeze for up to 3 months.
