LifeScape Recipes: Carrot Cake Bliss Balls

As we step into the holiday season, staying committed to a healthy eating plan can become more challenging. With many holiday favorites packed with unnecessary and unhealthy ingredients, indulging in even a few holiday meals can throw us completely off-track.

It is best to approach the holidays with a set of recipes that won't sabotage you in your pursuit of healthier living, while tasting delicious. These carrot cake bliss balls are the perfect compromise.

I absolutely love this delicious carrot cake treat from The Healthy Gut. The pecans and cinnamon provide that holiday-esque aroma and crunch, and the sweetness of the maple syrup (or honey) with the orange zest and carrots provides a perfectly balanced snack.

Carrot Cake Bliss Balls

Ingredients:

  • 1 cup firmly packed grated carrot (1.5-2 carrots)

  • 1 cup pecans

  • 1 cup finely shredded coconut

  • 2 tbs almond butter

  • Zest from 1 orange

  • 2 tbs maple syrup or honey

  • 2 tbs coconut oil

  • ½ tsp cinnamon


Instructions:

  • Place all ingredients in a food processor and blitz until well combined.

  • Take 1 tablespoon of mixture and roll into balls. Set aside and continue until all of the mixture has been turned into balls.

  • Refrigerate until firmer.

  • Keep in an airtight container in the fridge for several days or freeze for up to 3 months.
