LifeScape Recipes: Brussels Sprouts and Sweet Potato Hash

Brussels Sprouts and Sweet Potato Hash

Ingredients:

  • 1 Medium Sized Leak or Yellow Onion, diced 

  • 1 Medium Sweet Potato, cubbed

  • 10 Brussels Sprouts, cut into quarters

  • 1 Tbs Fresh Thyme - or - 1/2 Tsp Dried Thyme 

  • 1/2 Tsp Dried Sage

  • 1 Tbs of Fresh Lemon Juice 

  • 1 Tbs Coconut Aminos 

  • Himalayan Pink Salt, to taste 

  • 4 Tbs Avocado Oil 

  • Avocado, sliced 

  • 2 Tbs Fermented Vegetable

 

Instructions:

On medium heat add coconut oil, dried thyme, dried sage, and leeks and sauté until soft, about 5 minutes. Add the sweet potato and brussels sprouts and cook for 10 to 15 minutes or until tender. Stir in the lemon juice and coconut aminos. If using fresh thyme, add now and stir. Serve topped with avocado slices and fermented vegetables.
